Chef Emmanuel Bassoleil
French-born and based in Brazil, Chef Emmanuel Bassoleil oversees the culinary experience at Hotel Unique. A graduate of the Dijon School of Hospitality, he trained in Michelin-starred kitchens before taking over Skye Restaurant in 2001.
His cuisine reflects international influences and celebrates diversity, earning national and international recognition for its focus on local ingredients, lightness, sustainability, and respect for food.
